A Valentine To Kale

Should you find yourself with a bunch of kale, consider the following recipes – presented with love from me to you – to move your kale from the fridge to your belly:

Kale: simple & garlicky
Kale: creamy & spicy
EZ Sauteed kale – also includes a 101 on why kale is SO good for you
Kale chips

(Dino-chow eaters: Anne's recipe ideas above are also excellent except for the miso. If you're into dino-chow, use chicken, beef, or veggie broth instead.)

  1. Yay, kale! I also saute kale with garlic and a little vinegar, and then poach eggs on top of it with the steam from the liquid. We go through at least one head of kale each week.

    I love kale. So do the friggin' deer. They didn't touch a single collard or Swiss Chard plant but chewed every kale plant almost to the ground. But I am going to start some more this weekend!

  3. I like stewing it with diced tomatoes with some Italian seasoning. YUM!

    With the leftovers, I will throw some in the mix with some scrambled eggs for breakfast. Very Good!

  4. Kale Chips! Oven = 425. Olive oil, only a LITTLE salt, 5 mins...watch so they don't burn...DELISH!

    Dawn --> YUM! That sounds delish... and like it's begging for some sausage ;-)

    Lorraine --> Kale chips are my favorite go-to snack for all those occasions when you're "supposed to" be snacking: Super Bowl, movies, PMS time. I like to melt coconut oil and toss the kale in them before baking -- adds an extra layer of flavor. Try it!
