Step 1
Chop the mango into 1/2-inch pieces. Lovingly place 1/2 cup of the mango in a pretty bowl.
Step 2
Pour 1/4 cup of coconut milk over the mango. (I used reduced-fat coconut milk 'cause that means I can also eat almonds and avocados and olive oil in the same meal. Multiple healthy fat sources makes for a happy girl. You do what you like.)
Step 3
Sprinkle a few pinches of unsweetened, all-natural, no-crap, not-poison-processed coconut on top. (I've considered making my coconut shreds different colors to mimic the sprinkles on a donut. I just might do it and post a photo this week!)
Step 4
Place the bowl in the refrigerator while you eat dinner and allow the fruit to chillax for about 15-20 minutes.
Step 5
Eat your dessert slowly and indulgently with a spoon. Lick the bowl.
Heaven in a bowl: The Dance Remix
Very finely chop unsalted almonds or macadamia nuts and sprinkle on top when you take the bowl out of the fridge. Tastes decadent! But it's soooooooo good for you.
Heaven in a bowl: The Rock Remix
Try strawberries, blueberries, raspberries, blackberries, pineapple, or... this is bold, people... a mix of fruits. YUMMM-EEEE.
A word of caution: It's easy to OD on fruit and coconut milk. Tastes like dessert! So even if you're usually an eye-baller, you might want to actually measure this one. Go with about 1/2 cup of fruit (Unless it's strawberries; then you get a whole cup.) with 1/4 cup coconut milk. This will give you all of the enjoyment will keep your ass off the express train Sugarland (with stops in Crankytown, Guilt-ville, and Carb Crash City).

ReplyDeletegreat post... the bad thing(well it was GOOD) wa that i had actual mango sticky rice when you posted this. I take my mom to a thai place and she loves the stuff... too bad i end up eating most of it :) oops i mean :(
ReplyDeleteOK I'm gonna one up you. Try it with FROZEN blueberries, then it's like real frickin ice cream. Yummmmmm and so easy to OD. But an excellent dessert.
